Do I have to stay in Korea for a whole year, or can it be shorter?

You can stay in South Korea for a maximum of one year. Of course, you don't have to stay for the entire year and can leave earlier. However, it's important to note that you can only receive the Working Holiday Visa once in your lifetime.
